Apple Rose Cupcakes

  1. Make dough. Finely chop 125 g of butter, add 1 yolk, 190 g of flour, a pinch of salt, and quickly mix the dough. Wrap it in a food film and cool it in the fridge for an hour.
  2. Prepare apples. Wash 2 apples. Quarter apples, remove the core and then cut into thin slices. Boil 300 ml of apple juice with 50 g of sugar. Add apples and cook for 2-3 minutes. Remove from heat carefully and set aside on baking parchment.
  3. Shape roses. Melt 50 g of butter, and then add 30 g of sugar, and 0.5 tsp. of cinnamon. Roll out the dough into a thin layer of 3 mm thick; cut it into strips of about 40x3 cm. Grease a strip with the oil mixture, place the apple slices in a long line with a generous overlap, and with the apple edges to go beyond the edge of the dough.
